Kentucky Recipe Highlight- Skyline Chili

Ingredients:

• 1 small onion, chopped
• 1 1/4 C of beef broth
• 1 (26 oz.) can black beans, rinsed and drained
• 1 1/2 lbs. ground beef
• 1 (4 oz.) can green chilies, drained and diced
• 1 t of salt
• 1 t of ground cumin
• 1 t of dried oregano
• pepper to taste
• 1 (14 oz.) can diced tomatoes
• cooked spaghetti
• shredded cheddar cheese

Directions:
Brown beef with onions. Season with cumin,chilies, oregano, salt and pepper.
Drain grease off meat. Place the beans into pot with meat.
Add in beef broth and tomatoes with their juice.
Cover and bake 15-20 minutes. To serve, add chili on top of a plate of cooked spaghetti and top with shredded cheese.
