Irish Colcannon
a slight variation - substitute kale for cabbage
Irish Colcannon is a variation of mashed potatoes with cabbage.
2-3 lbs. potatoes, peeled, cubed, boiled
1 cup butter
1 1/4 cups milk
Cabbage, shredded
Bacon cooked and chopped
4 green onions, chopped
Peel, cube and boil potatoes. Meanwhile boil or steam cabbage in water. Drain and place in a mixing bowl. Add butter and milk. Blend together. Add in cooked shredded cabbage, green onions and chopped bacon. Stir together. Add a dab of butter to each serving.
